Michael Jordan, Executive Chef at Rosemary's

Michael Jordan made a huge name for himself as the Executive Chef of Emeril's New Orleans Fish House at the MGM Grand. He left last year with bigger plans and recently opened Rosemary's Restaurant at 8125 W. Sahara Ave. It's named after Chef Jordan's mother and features gourmet cuisine and an emphasis on fresh, locally grown ingredients. Do try Michael and Wendy's easy and delicious recipe for Chocolate Flourless Cake:

    6 ounces of high-quality chocolate, chopped
    3 eggs
    4 ounces of cubed butter
    1 ounce of chopped walnuts
    1 ounce of Grand Marnier
    1/2 cup of sugar
    1/4 cup of water

Combine sugar and water in pan over low-heat. Stir until it begins to boil. Boil for 1 minute. Stir in the chocolate until it melts. Add butter and melt. Add Grand Marnier. Lightly beat the eggs in a separate bowl. Slowly pour in the chocolate mixture. Pour the batter in a "spring form" pan lined with parchment paper that fills about 3/4 of the pan. Sprinkle the nuts on top. Place on a sheet pan in the oven. Add water in the sheet pan one-third up the cake. Bake at 350 degrees for 1 hour. Chill until set. Enjoy!
