Executive Chef Kevin Martinez of Malibu Chan's Restaurant learned at an early age how to cook. Hawaiian-born and from Filipino, Chinese and Spanish descent, cooking was an activity that
brought the family together. "My first major influence in cooking was from watching my mother and father cook at home," Martinez says.
At an early age, Martinez began working in some of Hawaii's busiest restaurants after high school, learning the culinary trade in such restaurants as the Roundhouse as a line cook before moving on to more tourist-driven establishments such as the popular Stuart Anderson's Cattle Company on Oahu, HI, responsible for managing the staff and
dinner operations. After working at the City Club of San Francisco on Sansome Street in San Francisco, Calif., Martinez was wooed back to Hawaii for the position of executive chef of Stuart Anderson's for five years before heading up the popular Palomino Euro-Bistro in Honolulu.
Now the executive chef of Malibu Chain's, Martinez defines the cuisine as a fusion between Pacific Rim cuisine and European influences with a contemporary California flair. Portions of the menu are influenced
by European-style sauces as well as Asian such as Thai, Chinese, Japanese, South Pacific and the Southwest to add some heat. "We'll be using various kinds of techniques and flavors while still keeping the integrity of the region that each dish originated from," says Martinez.
"I want our guests to trust that I'll put on the table an exceptional meal. My goal is for Malibu Chan's to be visited often by our patrons and not just seen as a place to go for special
occasions." I'm always learning," he says. "I try to challenge myself to think of better dishes to please our diners."
