“Low and Slow” Cooking for the Best Flavors...

January 2002 is a milestone for the, award-winning Memphis Championship Barbecue. In this critic’s opinion, Memphis serves the absolute best in Southern-style barbecue! From the smoked baby back ribs, to the chicken, brisket, pork, hot links and other specialties, Memphis is without equals in Vegas. Founder and owner Mike Mills says “we use the old-fashioned principle of low and slow barbecuing. This results in tender, moist meat, packed with flavors. And that low heat and slow cooking time, combined with Magic Dust (18 herbs and spices), our award-winning (100 year old recipe) sauce, and a mix of apple and hickory wood, not only enhances the smoked flavors, but makes for perfect barbecue.”

I love the baby back ribs, but my favorite has to be the hot links, an all beef sausage with special spices in a crispy outside casing that explodes with flavors. I also crave the tender pulled pork sandwich sprinkled with “Magic Dust,” sauced, and served hot. And don’t forget the Southern fried dill pickles. Wow, are they great!

Memphis is simply the best, and the proof is in the more than 2 dozen awards Mike has received, including the only 3 time “World Grand Champion,” and 4 time “World Champion” at the International Memphis (TN) in May Cook-off. It’s known as the “Super bowl of BBQ.” Mills also had top security clearance to board Air Force One during the Clinton administration. When the President wanted to enjoy

You too can experience barbecue fit for a president, in an old-warehouse style ambiance, with brick walls reminiscent of famous Beale Street in Memphis, TN or on the “porch” off the casino floor inside the Santa Fe. Hear live blues and the sounds of John Earl & The Boogey Man Band while taking an imaginary journey down Beale Street, every Friday and Saturday 9:00 P.M. - 2:00 A.M.
