8-0-8 Restaurant - A Europe-Pacific Culinary Adventure

8-0-8 is the telephone area code for the state of Hawaii and it’s the new name for a Europe-Pacific restaurant at Caesars Palace. Jean-Marie Jocelyn, one of the Islands’ most acclaimed chefs, brings his talents to Las Vegas. He’s generally regarded as one of the founders of Hawaiian regional cuisine. His award-winning restaurants (A Pacific Cafes) earned recognition by Conde Nest Traveler as one of the "the 50 choice restaurants around the country.” Hawaiian-themed fusion cuisine is a favorite of Epicureans around the world.

Euro-Pacific cuisine is an exciting and adventurous style combining classical European and Asian culinary techniques with ethnic ingredients of the Pacific Rim, for a flavorful blend. The appetizers, entrees, and desserts are beautifully created, expertly prepared, and artfully presented with uniqueness and balance of flavors that require experience and talent to perfect. My recent sampling of several menu items suggests that every other item on the menu is certain to be equally as outstanding. I taste the blending of European and Asian flavors They are well balanced and interact; never overpowering; always distinguishable.

The appetizers at 8-0-8 are the first to entice and tantalize the palate. One incredible example is the Deconstructed Ahi Roll - an Ahi Tartar, Avocado Salad, Crab Cerviche, White Truffle Dressing with Sushi Rice. Other starters include flavors of Japanese Pear Riesling Broth; Saffron Mussel Broth; Quince Compote, Lime Ginger Glaze, among others. You may select from Scallops; Salmon, Ahi Roll; Chilled Seafood Platter or Seared Hudson Valley Foie Gras. My favorite is the New Wave Bento - assorted appetizers served on individual miniature plates presented in a bamboo box.

Entrees include fresh regional Pacific fish served with Lime Ginger Beurre Blanc, Yellow Curry Ginger Sauce, Champagne Sorrel Sauce, or Cabernet Thyme Sauce and others of equal temptation. Several meat and poultry dishes are also available. I enjoyed my Porcini Crusted Ahi served with an outstanding dried Cherry-Pinot Noir Glaze, Stir Fried Asparagus & Mushroom, and an exceptional Foie Gras Spring Roll. The menu also suggests wine to pair with each appetizer and entree or style of food. A smart concept, indeed.

8-0-8's ambience captures a sense of serenity, intimacy, and some mystery, all within a strikingly sharp and modern surrounding. Honey-onyx, a semi-precious stone, is internally lit throughout the dining rooms' interior, accented by a ceiling of a simulated riverbed of brushed copper pebbles. Creative metal art-work adorns the walls. This is modern Pacific design at its' highest artistic level and is a fresh approach to Las Vegas dining.

Caesars Palace Sujoy Brahma, Assistant Vice President Food and Beverage gave Taste of Vegas a pre-opening tour of 8-0-8 promising a spectacular restaurant, and along with Tim Wright, General Manager/Maitre d’, and Chef de Cuisine Wesley Coffel, kitchen brigade and dining room staff, patrons should anticipate an outstanding dining experience.

Outstanding cuisine paired with accommodating service and striking ambience leaves one with an exhilarating feeling and desire to make repeat visits to this “Pacific Jewel in the Desert.” Experience this unique Euro-Pacific restaurant and the cuisine that has impacted the palates of gourmets, Epicureans, and all “foodies” alike.
